15 Minute Quesadillas


This is my 15 minute quesadilla recipe! You may think it’s impossible but the trick is in prepping while you are cooking. I love these quesadillas and is my go to meal when I’m feeling lazy but want something tasty too. This is a vegetarian dish but you can definitely add in meat  which might take a bit longer to cook. This recipe is pretty open ended on what vegetables you want to use and also which sauces you mix in.

Sometimes if I want to make this recipe even easier I chop up all the ingredients and keep them ready before I plan on cooking these quesadillas which cuts down on the time.


  • Chopping the vegetables while the onions and tomatoes are cooking makes this recipe quick

  • Cook the quesadilla on the pan till the cheese melts to enjoy the melted cheese oozing out of the quesadilla when you slice it.


Prep time: 5-10 min Cook time: 15 min Serves: 2-3

Ingredients :

  • 1 medium onion (1 ½ cup sliced onions)

  • 1 tomato

  • 3 cloves of garlic

  • 3-4 green chilis

  • 1 green pepper

  • 250 gms mushroom

  • 1 tsp red chili powder/ paprika

  • 1 tbsp hot sauce

  • 10 small tortillas

  • 200 gm grated Mexican cheese blend

  • 1 tsp salt


  • Start by heating 2 tbsp of oil in a pan. Once the oil heats up add garlic and green chili, sauté until garlic is light brown.

  • Add in the onions chopped lengthwise, sprinkle a pinch of salt  and cook for about 3-4 min until they turn soft.

  • Add the chopped tomatoes, sprinkle another pinch of salt and let’s it cook for about 2 minutes till they turn soft.

  • Before adding the vegetables add 1 tsp of red chili powder and 1 tbsp of hot sauce. Mix this in well and add the vegetables and remaining salt. Let the vegetables cook.

  • When they are almost cooked we need to heat up a frying pan on medium flame to put together our quesadilla.

  • Heat 2 tortillas on the pan on each side for 3-4 secs. Take on tortilla on the pan add a layer of cheese. As soon as the cheese starts melting add in stuffing and some more cheese on top and add another tortilla on top.

  • Carefully flip the quesadilla. When tortillas of the quesadilla look cooked take it off the pan. Slice it up and serve hot.
