Peruvian Coriander Rice and Chicken kebab

I was recently introduced to this beautiful dish called arroz verde con pollo at a Peruvian restaurant and it was one of the best meals I had! Arroz verde meaning green rice gets its touch of green from one of my favourite herbs Coriander! I tried to create my version of this dish by giving a slightly different flavour to the chicken, yes that’s where the pollo in the name comes from, by clubbing it with some chicken kebabs. This green rice is a great side dish and can be paired with anything else, so my vegan friends I got you covered!

Ingredients:

For the coriander rice:

  • 1 cup rice

  • 1 cup water

  • 1 ½ cup coriander leaves

  • 1 tsp cumin

  • 1 medium onion

  • 2 cloves minced garlic

  • 1 tsp crushed black pepper

  • 1 cup vegetable/chicken stock

Chicken kebab:

  • 500 grams chicken thigh

  • ½ cup hung curd (plain yogurt drained of all it’s water)

  • 1 ½ tbsp ginger garlic paste

  • ¼ tsp turmeric powder

  • 2-3 tsp red chili powder

  • 1 tsp garam masala

Method:

Coriander rice:

  • Heat 1 tbsp of oil in a pot. Add chopped onion and saute till light brown.

    • 1 medium onion

  • Add minced garlic, cumin seeds and crushed black pepper to the onion and fry for a few min till garlic is light brown

    • 2 cloves minced garlic

    • 1 tsp crushed black pepper

    • 1 tsp cumin

  • Lightly toast raw rice with this mixture for a few minutes.

    • 1 cup rice

  • Blend coriander leaves with water and add this to the rice along with the stock.. Mix it all together , add salt to taste and cook on high heat till the water starts to boil. Then cover the pot and cook on medium heat for 10 min.

    • 1 cup water

    • 1 ½ cup coriander leaves

    • 1 cup vegetable/chicken stock

  • Check if the rice is cooked by poking into the pile of rice to see if there is any water left. If there is then let it cook till the water is absorbed.

Chicken Kebab:

  • Cut the chicken into medium pieces.

    • 500 grams chicken thigh

  • In a bowl mix all the spices together and marinate the chicken in this mixture for at least an hour.

    • ½ cup hung curd

    • 1 ½ tbsp ginger garlic paste

    • ¼ tsp turmeric powder

    • 2-3 tsp red chili powder

    • 1 tsp garam masala

  • You can grill the chicken or bake it. For baking preheat oven to 350 degree and bake the chicken on each side for 10 min and then broil on each side for 5 min. Check if the chicken is cooked well if not bake for a few more minutes.
