Paneer and Chili Cheese Stuffed Mushrooms

If you want to try out a new spicy and tasty recipe for stuffed mushrooms you’re looking at the right one! This recipe offers you two different stuffings influenced by Indian flavours. The first one is inspired from one of my favourite snacks which is Chili Cheese toast! A mix of cheese, butter, sliced chilis and minced garlic are slathered onto bread which is toasted on a pan till the cheese melts. The paneer masala one has a spicy Indian flavour to it which tastes amazing with a bit of hot sauce on top.

Chili Garlic Cheese stuffed mushrooms

Ingredients:

  • 12 baby Bella mushrooms

  • 4 green Thai chilis or mirchi

  • 3-4 cloves garlic minced

  • ½ tbsp butter

  • ½ cup of cheese (I used a mix of Jack cheese and cheddar)

Method:

  • Pre-heat oven to 350F/180C

  • Remove the stems from the mushrooms. You need to remove it from inside of the mushroom head so that you can fill stuffing.

  • In a pan heat about 1 tsp of oil and lightly cook the thinly slice the green chilis and minced garlic. In a bowl mix all the ingredients for the stuffing.

  • Stuff the mushrooms with this mix. In a baking pan place the stuffed mushrooms and bake for 20 min.

Paneer Masala stuffed mushrooms

Ingredients:

  • 12 baby bella mushrooms

  • 3/4th cup small paneer cubes

  • ½ cup diced onion

  • ½ tomato diced

  • 2 green chilis

  • a pinch of turmeric

  • ½ tsp red chili powder

  • ½ tsp garam masala

  • ½ tsp salt

Method:

  • Pre-heat oven to 350F/180C

  • Remove the stems from the mushrooms. You need to remove it from inside of the mushroom head so that you have a cavity to fill the stuffing with.

  • In a pan heat 1 tbsp of oil. When the oil is hot add in diced onions and chopped chilis. Sautee for a few min till onion is light brown.

  • Add in chopped tomatoes and cook for a few minutes. Once the tomatoes softer add in the turmeric, red chili powder, garam masala and mix well. Soon after mixing the spices add in the paneer and salt cook for about 10 min till the paneer is almost cooked.

  • Stuff the mushrooms with this mix. In a baking pan place the stuffed mushrooms and bake for 20 min.
