A deep fried pastry stuffed with spicy potatoes called Samosa is one of the most famous comfort foods of India. Different versions of the samosa are famous and prepared in many of the South Asian and  African countries stuffed with meat or vegetables but traditionally in India it is stuffed with potatoes. In this recipe I created a fusion of samosa and pie by baking the pie stuffed with a traditional Indian potato stuffing. Enjoy this twist on one of my favourite vegan snacks and definitely pair it with mint chutney or ketchup will do.
