Papas Rellenas

Papas Rellenas is a popular dish in Latin American countries made of fried potato balls stuffed with a savoury meat filling. Each Latin American country has it's own unique version of this dish but in this recipe I chose to give the meat filling a mix of Cuban and Indian flavour. The idea to create this fusion came from realizing that Papas Rellenas is very similar to the Indian dish called Kheema Patties where the meat has a spicy taste along with the key ingredient of Indian cooking which is ginger and garlic paste. I created my version by combining the traditional Cuban Picadillo having more of a tomato and cumin flavour with that of Indian Kheema. Try it out to taste my twist on this recipe!

Ingredients:

  • 250 gm. minced meat

  • 1 medium onion

  • 2 tomatoes

  • 1 bay leaf

  • 2-3 mirchi or thai green chili

  • 2 tbsp. ginger and garlic paste

  • ½ tsp. garam masala

  • 1 tsp. cumin powder

  • ½ tsp. coriander powder

  • ¼ tsp. turmeric powder

  • 1 tsp. red chili powder

  • 2 medium potatoes

  • ½ cup of breadcrumbs or all purpose flour

  • 1 egg

Method:

  • Boil the potatoes till they are soft enough to mash and keep them aside.

  • Heat oil in a pan and add a bay leaf. Once the bay leaf turns a bit brown add the chopped onion and sauté till they are light to medium brown.

  • Blend the ginger garlic paste with the green chilies and cook it along with the onions.

    • 2-3 mirchi or thai green chilies

    • 2 tbsp. ginger garlic paste

  • Next, add chopped tomatoes and cook them till you get a puree like consistency.

  • Once the tomatoes are cooked add the following powdered spices, turmeric, red chili powder, cumin powder and coriander powder. Mix these powders well.

    • 1 tsp. cumin powder

    • ½ tsp. coriander powder

    • ¼ tsp. turmeric powder

    • 1 tsp. red chili powder

  • Soon after mixing the powdered spices add the minced meat to this along with garam masala and salt.

    • 250 mgs minced meat.

    • ½ tsp. garam masala

    • Salt to taste

  • Once the meat is well cooked keep this aside till it cools down.

  • For making the meat stuffed potatoes start with taking a big spoonful sized ball of mashed potatoes and flatten it out in your palm. In the center add a spoonful of minced meat and then bring all the corners together of the potato and enclose the it to make the shape of a ball.

  • Refrigerate these for a 15 min.

  • Heat the oil for deep-frying the papas rellenas. Lightly whisk the egg in a separate bowl. Roll the balls in the egg and then roll them in the breadcrumbs or all purpose flour and deep fry it.

  • Serve them hot with ketchup or any other sauce or dip.
