Chicken Fajita Kebabs with Peruvian Green Sauce


Simple and easy recipe to make delicious chicken fajitas. I paired it with a creamy and spicy Peruvian green sauce (Aji verde) which has a strong resemblance to the Indian green coconut chutney. Cooking the chicken fajitas like kebabs adds a smoky flavour and the spicy sauce tastes amazing with the fajitas giving you a mouth watering meal to enjoy.


Dry rub for Chicken :

  • 1 kg chicken breast or thigh

  • 2 cloves garlic (minced)

  • 1 tsp cumin

  • 2-3 tsp red chili powder

  • 1 ½ tsp salt

  • 2 tsp lemon juice

  • 1 tsp oil

Peruvian green sauce (Aji verde):

  • 1 cup cilantro

  • 1 clove garlic

  • 2-3 jalapeños

  • 1-2 tbsp of mayonnaise

  • 1 tsp white vinegar

  • ¼ lime

For the vegetables:

  • 1 green pepper/ capsicum

  • 1 orange pepper

  • 1 yellow pepper

  • 1 medium onion


Chicken fajita kebab

  • Wet the wooden skewers before you start cooking. Cut the chicken into small pieces. Mix all the ingredients for the dry rub and add mix the chicken pieces in it. Leave it aside for at least 45 minutes.

  • Preheat oven to 350F/180 C. Cut the peppers and onion into medium size pieces. Take the skewers and layer pieces of pepper, onion and chicken by alternating them.

  • Bake in the oven for about 30 min and flipping the skewers to the other side after the 15 min so that the chicken gets cooked well. Broil on high for 2-3 min on each side.You can also grill instead of baking.

Peruvian green sauce (Aji Verde)

  • For the Peruvian sauce start by adding coriander, 2 jalapeños, garlic, lime juice and vinegar in a blender and blend it. Add up to ½ tsp of water if required if the ingredients are not blending well. Then add mayonnaise and blend again to get a spicy and creamy sauce.

  • Start by adding 2 jalapeños and 1 tbsp of mayonnaise. Taste this sauce and add more jalapeños depending on how spicy you want it or add more mayonnaise if you want it more creamy.
