Cheese Pav Bhaji Pull Apart Bread

Every Indian who loves street food certainly enjoys their share of the famous spicy vegetarian street food of India, Pav Bhaji. This delicious dish is usually eaten by dipping pieces of bread or pav as we call it in a spiced vegetable mix garnished with coriander and chopped onions. I created a new and tasty way of enjoying this recipe by mixing the recipe for cheesy pull apart bread and pav bhaji giving you Cheese Pav Bhaji Pull Apart Bread! Enjoy the same flavours by pulling each piece of bread from the boule covered with a cheesy spiced bhaji.

Cook time: 1 hour (35 min for stuffing, 25 min to bake)

Total time: 1 hr 15 min

Ingredients:

  • 2 potatoes

  • 2 small bread boules

  • ¼ cauliflower crown (optional)

  • ¼  cup peas

  • ½ capsicum/green pepper

  • 3 tomatoes

  • 1 onion

  • 3 tsps red chili powder

  • 3 tsps pav bhaji masala

  • 2 ½  tbsps butter

  • 2 tsps kasuri methi/ fenugreek leaves

  • 1 tbsp ginger garlic paste

  • ¼ tsp turmeric

  • ¼ lemon

  • 2 tsp cilantro/coriander

  • 1 cup shredded cheese (preferably white cheese that’s not very sharp like Amul cheese or mozzarella)

Tips:

  • You can add or reduce the amount of red chili powder or pav bhaji masala depending on the level of spice you prefer. Same goes with the lemon juice and salt.

  • In place of a bread boule you can also use a set of pav or dinner rolls.

Method:

  • Start with boiling the potatoes and cauliflower. In a pan heat 1 tbsp butter, add chopped tomatoes and fry till the tomatoes turn soft. Add in peas, capsicum, boiled potatoes and cauliflower. Add in red chili powder, turmeric , pav bhaji masala and water. Mix the vegetables , chili powder, salt and ,cook for a few minutes. Mash all the vegetables and set aside.

    • 2 boiled potatoes and 1/4th boiled cauliflower

    • 1 tbsp butter

    • 3 chopped tomatoes

    • ¼  cup peas

    • ½ capsicum/green pepper

    • 2 tsp red chili powder

    • 2 tsp pav bhaji masala

    • 1 tsp fenugreek leaves

    • 1 tsp salt

  • In the pan heat 1 tbsp of butter and add chopped onion. Fry the onions till they turn soft and add ginger garlic paste. Mix in red chili powder, turmeric and pav bhaji masala, fenugreek leaves and salt.

    • 1 tbsp butter

    • 1 onion (set aside 1-2 tbsp of chopped onion for garnishing)

    • 1 tbsp ginger garlic paste

    • 1 tsp red chili powder

    • 1 tsp pav bhaji masala

    • 1 tsp fenugreek leaves

    • 1 ½ tsp salt

  • Add the vegetable mixture that we set aside earlier to the pan, add lemon juice and mix it all together. Add salt.

    • ¼ lemon

  • Preheat oven to 350F/ 180C. Take the bread boules and make deep diagonal slits horizontally and then vertically so as to create cube sized pieces on the surface of the boule. Make sure to cut deep into 3/4th of the bread.

  • Mix the cheese into the bhaji (spiced vegetable mix). Spread butter in between the slits and on the top. Fill the space in the slits with the cheese and pav bhaji mix. Bake for 25 minutes till the cheese melts and the bread softens.

    • ½ tbsp butter

    • 1 cup cheese

  • Remove from the oven and garnish with chopped onions and coriander. Serve hot.
